Agreed, Varan is one of my favorite kaiju, but his movie was quite lackluster - he deserves a remake. It probably won't ever happen, though. Hell, it's hard enough to get him in a Godzilla film, so the chances of another Varan solo movie are pretty much zero.

Hopefully, the doubtful success of the reboot could bring som interest with other monsters as well as Godzilla. There were rumors in 2008 and 2010 that if it were to be do well at the box office, two films would be considered; The Mothra, a Mothra stand alone featuring Krystalak, and a Gamera 3D, which was concieved by Yoshimitsu Banno.
