Godzilla's weakness to electricity in King Kong vs. Godzilla is less an overt weak point and more ties into him being frozen in ice for several years, having some negative effect on his body. Given he later is neutral or even benefits off electricity my guess is he lacked time to acclimate to it during the events of KKvG.

Heisei kaiju like Space Godzilla, Battra, Destoroyah and Biollante exist in the Showa timeline, may as well throw in rejected kaiju like Bagan, Deathla, Barubaroi and Deutalious into the mix as well. They were all encountered in between the timeline of Terror of Mechagodzilla and Destroy All Monsters.
Minya is absent in the later Showa films because despite being an infant, he is mature enough in the Godzilla species' life cycle to fend for himself at this point and not require an older guardian with him at all times.
The events of Zone Fighter take place in what I call "Earth Two" of the Showa era, very similar to the timeline we all know and love but different, perhaps its a timeline where a lot of the unmade Godzilla films might even be canon.

Minilla also shows the Showa Godzilla line seems to age relatively speaking at a very slow rate, with him still a "baby" even in 1999.

The 50's Orochi movie takes place in this timeline, as do many classical monster movies from the 30s, 40s, 50s, and 60s.

You're right; Minilla's definitely not an infant. I'd say he's more in the early juvenile stage of his life.
But through the three Showa films, he seems to be stuck there. At least in the Heisei films, the new son of Godzilla grew from infant (Baby Godzilla) to juvenile (Little Godzilla) to subadult (Godzilla Junior) to adult (Godzilla II), albeit within three films. And in his first, last and only Millennium appearance (Godzilla: Final Wars), this version of Minilla as an infant started out as the right size when compared to Godzilla. His next stage at the end of that appearance was the same as in the Showa films - early juvenile.

This one has been acknowledged by Tomoyuki Tanaka in a book so its not exactly a headcanon but ever since I read it, I've kind of adopted it into my own head

The reason Minya stays as he appears in SoG is because when he was broken out of the eggs by the Kamacuras, it somehow stunted his development, as maybe he wasn’t ready yet.

My headcanons are:
1. King Caesar’s species were once a population of lions before being irradiated and becoming more mystic than organic.
2. 1st Gen King Kong actually drowned while on his way to Faro Island, which explains why he never appeared again, and was not used for KKE.
3. Hollow Earth exists in the Showa continuity, this would explain why Kaijus like Baragon live underground.
4. 1st Gen Godzilla and 2nd Gen Godzilla are actually related, either father and son or ancestor and descendant.
5. 1st Gen King Kong’s species went to battle with Godzilla’s species, with Godzilla’s species winning the battle.
6. Mothra 3rd Gen is the daughter of Mothra 2nd Gen.
7. Rodan’s species preyed on King Kong’s species.
8. 2nd Gen King Kong’s species is a subspecies to 1st Gen King Kong’s species.
9. Gorosauruses were the reason why 2nd Gen King Kong is the only Kong on Mondo Island and the nearby islands.
10. Titanosaurus is actually still alive, just fled to the lower depths of the ocean where it can’t be found.
11. Anguirus’ species were mostly scavengers.

Minilla is the biological son of ShodaiGoji and rightful King of the Monsters. Shodai Goji is the king by birth but was driven mad by his wife and family being killed in the H-bomb test.
Showa Goji was the asshole younger brother of Shodai Goji who kept ducking his responsibilities and only wanted to fight other monsters.
Showa Goji only becomes king due this brother's death and he is also king of the Angurius species.
Son of Godzilla is Showa Goji adopting Minilla and becoming his father as a promise to his older brother who died. Minilla and 70's Showa Godzilla are how Shodai Goji would have acted had he not been driven mad by the H-bomb incident.
Showa Goji was the asshole younger brother of Shodai Goji who kept ducking his responsibilities and only wanted to fight other monsters.
Showa Goji only becomes king due this brother's death and he is also king of the Angurius species.

2. The origin of Mothra and the lore about Infant Island is the exact same as in the novel “The Luminous Fairies and Mothra”, the inspiration for the 1961 film
3. The various aliens began attacking Earth due to the sudden popping-up of powerful kaiju starting in 1954

The Nebulan/Seatopian alliance is being manipulated by the Nebulans for their own ends. Like the City of Ember novel, the Seatopians we see are the remnants of a technologically advanced civilization who only vaguely know how the old tech works and have only adapted to parts of it. The Nebulans "help" them so they can get access to the technology they understand for their own manipulations before they will eventually, betray them and steal all the tech for themselves.
