It'd also be the same reason neither Godzilla nor Kong will die or kill each other since to the audience they're the heroes in their eyes and they don't like to see heroes kill each other like Stark vs Rogers hence the likely team up we'll probably be seeing in the film.

Except Godzilla and Kong are kind of superheroes. Plain dinosaurs are not. Also what about the families of those killed by said dinosaurs?

No, that's drawing wild conclusions. And even if that prediction came to pass, a downer ending isn't bad writing in itself. The novels and movies are explicitly a warning about the dangers of bioengineering, after all, and a downer ending, if written well, would be in keeping with those themes.
