My favorite (of the handful I've seen) is easily Ultraseven.
Ultraman Nexus is pretty cool, but its uneven, and the ending is very rushed.
Ultraman Max is a good one in terms of capturing the iconic aspects and making them digestible for a new audience.
I really liked Ultraman Mebius, but it's heavily invested in continuity, so if you haven't seen most of the earlier shows (I hadn't), you might want to research them a little.
Ultraseven X is uneven, but some of it is really cool, and it's short enough that you can take in the whole thing is just a couple of days.

Here’s an idea : if they were to repeat the duo format of this year’s R/B, I think the next series should star both a male and female Ultra who are lovers, whereas Russo and Blu are brothers.

I'd recommend Ultraman Neos. 12 episodes. Introduces core concepts of Ultaman pretty well. With the original, if you start to find the early episodes kind of repetitive/generic, don't worry; to my tastes, it gets steadily better as it goes on. I completely forgot I had it until just now. Well since the original show is easily available, I would say start there. Ultra Seven is hands down the best and Shout! Factory is streaming the show on their website if you don't want to buy the DVD before you check it out. Seven/Dan Moroboshi is definitely one of the best lead characters on any of the shows, the supporting cast is strong, great monster designs, really good atmosphere and visual style, and some very cool and at times really moving scripts. I'll try to be brief as I did a 35 minute review on the show as to why I loved it along with scenes to back up my case. 1. The characters are really diverse, all have moments to shine.
2. The show isn't formulaic. Sometimes Seven might show up in the middle of an episode and that's it. Sometimes it might be at the end. Sometimes he might not even grow. Sometimes he might not even fight a monster at all. No matter what, no episode feels like the previous one.
3. The episodes cover multiple types of generes. There are episodes that are pure horror. There are episodes that are science ficiton. Episodes that follow fantasy. It's a wide range. You get comedic moments, you can serious moments, the show doesn't shy away from death either. It might be a Toku show, but the way the stories are told makes it seem more like The Twilight Zone, but with super heroes.
4. The cinematography is outstanding. Sometimes it features episodes with excellent sunset backgrounds. Others include neat camera angles that you would find in a Film Noir as opposed to the industry standard. Episodes might have close up facial shots to signfy confusion or mental breakdowns. Colors may change at the drop of a hat.
5. Social commentary. The director of the show was a man who constantly had to show his ID on his way home every day due to him living in a US occupied area. He put that aspect into the show. Additionally, we get episodes that touch upon the human race creating a nuclear device to deter alien threats and Seven has to question the morals of humans because of it.
6. Seven is down right brutal if you piss him off. He will chop off heads, rip limbs off, slit throats, etc. It's not something you see from many Toku heroes.
7. The passage of time is not in real time. Three years goes by between like episodes 10 to 37, which is not normal for most Toku shows as they usually follow the year run as if it were actually occuring during that year.

Honestly, Neos is probably my least-favorite of all of the show Ultra shows I have seen. Its a series of ideas that have all been done in past shows (Neos was originally slated to be made circa 1995 but was held back until 2000 and by that point some of its ideas were already used) all executed in the dullest way possible. There's nothing inherently awful about it, and there are maybe two of three episodes I liked, but its beyond bland. Really, there is no better place to start than the original show, though Ultra Q might not be bad considering every episode is essentially a 24-minute Toho monster movie. Seven and ROU aren't bad either, but the original is the most logical (Plus, you'd appreciate a certain part in ROU so much more if you've seen '66 and Seven).
