I don't think a female Godzilla would make that much difference. All we'd see is a giant radioactive kaiju engaging in the usual behavoir of destruction and fighting other kaiju. I doubt people would even notice until some producer or film crew released the fact.

For probably what was a offhand remark and the only thing of its kind throughout the years, this is being hung onto pretty hard by some. Is there even an actual quotation of what the man said?

If that's true, then there is absolutely no need to make any change. Things are consistent and explained, which includes the existence of offspring.

I think Godzilla's gender depends on the film in question.

The 1998 monster is certainly female.

The 1954 Gojira (for example) is called "King of the Monsters" so that I say is a male.

The GMK Godzilla is born out of the dead spirits that were angry at Japan, so I don't think GMK Gojira actually has a gender.

To me there needs to be a female Gojira for the baby Gojira Minilla/Godzuuky/Gojira Jr to even be born and later found by Gojira.
I'm a believe of God and Jesus Christ my saviour and not afraid to say so.
Although I'm not against giving freedom to same-sex couples/marriage (as America is supposed to be free), as a Christian (which the Bible describes as a sin) and me personally I don't care/desire/agree with same sex couples/marriage.

Well, I guess Biollante fills the latter roles since she was part Godzilla and, well, they did not get along.

To be honest, I've never given too much thought to his gender. Toho calls Godzilla a he in most cases, so I go along with it.

Just like Toho and just about every other source has said, Godzilla is definitely male and I certainly agree.

I think Godzilla's gender is so far removed from any of "his" motivation or doings that it doesn't really matter. Somehow the 'species' has been able to reproduce/continue, depending on which canon you follow, but it's never been clear how or why so if that were really to come into play, it would seem Godzilla reproduces asexually. Seems like GINO wasn't too far off the beaten path with that one. "He" is just fine by me, but Godzilla seems more of an entity than a character defined by a gender or gender-related motive.
